Ukrainian culinary traditions were established more than 7,000 years ago by the Trypillians! It was then that our ancestors learned how to make bread, which became the “head of everything” for thousands of years. At first it was unleavened, then they learned to make a sourdough starter, the first products were made from rye flour, but in different regions of Ukraine different ingredients were added to it, which contributed to the incredible variety. This is evidenced even in Balzac’s letters, in which he wrote: “…When you come to Ukraine, to this paradise on earth, where I have already noticed 77 ways of making bread.” Ukrainian cuisine is not only borsch with bacon, but also many other unique and delicious dishes. Here are some of them:
Bograch
Bograch is a rich soup that came to us from Transcarpathia. It is made from several types of meat (most often beef, pork, and lamb), potatoes, paprika, and other vegetables. The taste of bograch is very rich and spicy, thanks to the use of various spices.
Kapusnyak
Kapusnyak is a traditional Ukrainian soup made from sauerkraut. Its flavor is sweet and sour, which is achieved by combining sauerkraut with carrots, onions, and pork. Sometimes millet is added for thickness.
Okroshka
Okroshka is a cold soup made with kvass or kefir. Okroshka is made with chopped vegetables (potatoes, cucumbers, radishes), boiled eggs, herbs, and meat. It is an ideal dish for hot summers.
Varenyky
Dumplings are a symbol of Ukrainian cuisine. They can be filled with various toppings: potatoes, cheese, cabbage, meat, mushrooms, cherries. Dumplings are served with sour cream or fried onions and cracklings.
Kulish
Kulish is an old Cossack dish made from millet, lard, onions, and meat. It resembles a thick porridge and is very satisfying. Kulesh was an indispensable dish for Cossacks during campaigns.
Banosh
Banosh is a Hutsul dish made from corn flour, cooked with cream or sour cream. It is served with cheese and fried cracklings. It is a real delicacy of Carpathian housewives.
Deruny
Deruny are potato pancakes that are fried until crispy. They are served with sour cream or mushroom sauce. This is a simple but extremely tasty dish.
Kyiv cutlet
Kyiv cutlet is one of the most famous Ukrainian dishes outside the country. It is a chicken fillet with a piece of butter hidden inside, breaded and fried until golden brown.
Gombovtsi
Gombovtsi is a traditional Transcarpathian dessert. They are steamed pies made of cottage cheese, semolina, eggs, and sugar, rolled in breadcrumbs. Gombovtsi can be filled with or without fruit or berry. They are usually served with sweet sour cream sauce.
Ukrainian cuisine impresses with its richness and diversity. Each dish has its own history, unique ingredients and cooking method. It reflects the richness of our land and the talents of our people. When you taste these dishes, you not only enjoy the food, but also touch the centuries-old traditions and culture of Ukraine.
